Pancakes with pumpkin?! This is a really great combination! Do you also love pancakes for breakfast? Then try the Autumn version with pumpkin. How nice it is to make these delicious vegan and aromatic pancakes with pumpkin on a cool Sunday morning. It is impressive what you can do with a pumpkin. My favorite is the Hokkaido pumpkin because you can eat the skin. In my recipe, I use the Hokkaido pumpkin but I’m sure you can try it with another sort.

I´m surprised how yummy pancakes taste with pumpkin puree. The pancakes are so fluffy and moist. They are my absolute favorite comfort breakfast during the autumn season! Besides, this breakfast is so easy and quick to make assuming the pumpkin puree is ready. Usually, you have enough puree left to try out other pumpkin creations such as these delicious savory and simple pumpkin meals.

What ingredients are necessary for vegan pancakes with pumpkin?

As usual, I used spelt flour for my vegan pancakes. The nutty taste of this flour gives the pancakes a very special aroma.

Of course, you also need pumpkin puree. I’ve only tried these pancakes with the Hokkaido pumpkin but I can imagine that the recipe works just as well with other varieties.

How do you prepare the pumpkin? First, you cut the pumpkin into small pieces, put them in a saucepan with saltwater and simmer them for about 15 minutes until they are very soft. Puree the pieces. Then you can add the pureed pumpkin to some dishes. You can also keep your pumpkin puree in the fridge for a week.

You will also need oat milk or another plant variety. I personally prefer to use oat milk.

More ingredients you need are baking powder, cinnamon, salt, coconut oil, apple vinegar, chocolate chips, and agave syrup.

You can also skip the chocolate pieces and enjoy the pancakes without chocolate :-). If you like eating nuts, I recommend adding some ground walnuts as in my Banana Chocolate Chip Pancakes recipe. These pancakes are made from bananas and flour.

Why is pumpkin so healthy?

Pumpkin is also very healthy. It is an important source of vitamins (including beta carotene – the precursor to vitamin A), minerals (including potassium, magnesium, calcium, and iron).

That is already a good reason to try pumpkin dishes :-).

Ingredients

  • 150 gr spelt flour
  • 150 gr pumpkin puree
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1 pinch of salt
  • 220 ml oatmilk
  • 2 tbsp coconut oil
  • 1 tsp apple vinegar
  • 2 tsp agave syrup
  • some chocolate chips

Instructions

  • Mix wet ingredients together in a bowl and dry ingredients in another bowl.
  • Pour wet ingredients slowly into the dry ones.
  • After that add chocolate chips.
  • Heat coconut oil in a pan and fry pancakes.
