Who doesn’t love eating pancakes for breakfast? The other day I wanted to create a new Pancakes recipe. Since I had some overripe bananas left I had the idea to make Chunky Monkey Pancakes. Basically, these are banana pancakes with chocolate chips and walnuts. This combination is absolutely delicious and I highly recommend it. I prefer to eat Pancakes on Sunday for breakfast or as a snack. Even without milk and eggs, you can make delicious, fluffy pancakes.

How to make the best banana chocolate chip pancakes?

Pancakes can be easily prepared without milk or eggs. For this recipe, I simply used oat milk and as an egg substitute, the banana actually serves. That means for one egg mash half a ripe banana with a fork.

I really love spelt flour, so that’s why I used it for these pancakes. Spelt flour is a healthy alternative to wheat flour. Spelt contains more and higher quality protein as well as more vitamins and minerals. Spelt also has a high amount of fibre and unsaturated fatty acids. That’s why I highly recommend using spelt flour! 🙂

I have already used spelt flour for my carrot cake, banana bread, banana chocolate muffins, and pumpkin pancakes.

These pancakes are also ultra fluffy. I love it and because of that, I try a lot of different kinds of pancake recipes to make them even more fluffy. They are the best I’ve ever made! The right amount of baking powder is important. In addition, you should mix the wet and dry ingredients separately! It also helps to let the dough rest for about 10 minutes and not to fry them directly in the pan.

Healthy preparation of pancakes

The fact that these pancakes are without sugar, wheat flour, and dairy products makes them healthier than the usual varieties. They also contain ground walnuts, which are rich in antioxidants that counteract free radicals in the body. They are also rich in omega-3 fatty acids, vitamins, minerals, and zinc.

Other healthy ingredients are coconut oil, banana as well as cashew nuts. That’s why you can enjoy these pancakes without a guilty conscience.

Topping Ideas for perfect Pancakes

Toppings are especially important for the perfect vegan pancakes. There are healthy combinations but of course also rather unhealthy combinations. A healthy variation would be, for example, to prepare a delicious blueberry or strawberry sauce, add fruits, top it with maple syrup. That´s my favorite combination. But it is also absolutely delicious to spread cashew or peanut butter over the pancakes. Sometimes all I need is chocolate sauce for my pancakes 😀

Ingredients

  • 100 gr Spelt Flour
  • 50 gr Walnuts
  • 1 Banana
  • 100 ml Oat Milk
  • 1 tbsp Coconut Oil
  • 2 tbsp Cashew Butter
  • 3 tbsp Agave Syrup
  • 1 1/2 tsp Baking Powder
  • 1 tbsp Vanilla Extract
  • 20 – 30 gr Chocolate Chips

Instructions

  • Mash bananas with a fork in a small bowl.
  • Add wet ingredients and mix it well.
    Important: Melt coconut oil and mix it with room temperature milk.
  • Mix dry ingredients separately.
  • Then mix dry ingredients into wet ingredients while stirring.
  • Add chocolate chips.
  • Let the dough rest for about 10 minutes.
  • Add coconut oil or vegan butter to the pan and fry pancakes golden brown.
