Healthy Chocolate Baked Oatmeal with Bananas

Baked Oats is one of my absolute favorites for breakfast. It consists mainly of oats, milk and bananas. The baked oatmeal casserole is so quick to make, healthy, filling and so delicious. This baked oatmeal with bananas is perfect for breakfast or dessert. This breakfast is a MUST for all porridge, chocolate and banana bread fans. The baked porridge is vegan and gluten-free.

Chocolate Banana Bread Baked Oats

As you may know, I’m a big fan of Baked Oatmeal. I also love a delicious warming bowl of Oatmeal but the Baked Porridge has more crunch due to the firmer texture.

There are so many delicious different variations that you can try and this chocolate banana bread version I do not want to withhold from you. Unlike the classic banana bread with flour this porridge is completely without flour. The base consists of oats, bananas as well as oat milk, similar to my Baked Oatmeal recipe with bananas. Once you let the baked oatmeal porridge cool down a bit it will become firmer and you can cut them into bars. You can enjoy them cold or reheated. A really great snack or filling breakfast. Afterwards, your craving for sweets is definitely satisfied and at the same time you’ve treated yourself with a healthy dessert that is packed with lots of nutrients.

This breakfast casserole is so easy and quick to make. You only need a few ingredients. Plus, you can easily swap out ingredients. If you don’t like banana, be sure to try my fruity Baked Oatmeal recipe with strawberries or raspberries!

Baked Oats – Meal Prep and Storage

You can prepare the baked porridge in advance without any problems. It is very suitable for Meal Prep. You can also directly prepare double the amount and store the Baked Oatmeal in an airtight container in the refrigerator for up to 5 days. This way you’ll have a delicious filling breakfast for almost a week and you won’t have to worry about it anymore. The porridge can be heated briefly in the microwave or can be enjoyed cold.

You can also freeze the Baked Oatmeal for up to 3 months. You can defrost it in the microwave. It’s best to freeze the oatmeal in portions.

  • Yogurt
  • Chocolate sauce
  • Fruit

Ingredients

  • 150 gr Oats or gluten-free Oats
  • 250 ml Oat Milk
  • 20 ml Agave Syrup or Maple Syrup
  • 2 Bananas
  • 1-2 tbsp Cashew Butter
  • 2 tbsp Coconut Oil
  • 2 tbsp Ground Flaxseed
  • 30 gr Shredded Coconut
  • 15 gr Cocoa Powder
  • 25 gr Chocolate Chips OPTIONAL

Instructions

  • Mix oats, shredded coconut, flaxseed, cocoa powder together in a bowl.
  • Mash the bananas and mix them with oat milk, melted coconut oil, cashew butter and agave syrup. Add chocolate chips while stirring.
  • Pour the oatmeal mixture into a baking dish. Be sure to top the Baked Oatmeal with a banana before baking – It tastes so delicious!
  • Bake the oatmeal for about 20 minutes in the oven (until golden brown).
