This Apple Pie recipe is perfect for autumn and winter season. It’s also the perfect snack for Thanksgiving! Who doesn’t love the heavenly scent of apple pie in the kitchen?! This Apple Pie is very easy to make, aromatic and in combination with date caramel, this Apple Pie recipe simply tastes heavenly.

Apple Pie Recipe

Apple pie is my absolute favorite. That’s why I’m happy to show you this recipe today. I have made this recipe very often lately because I love to enjoy a warm piece of apple pie, especially on cloudy winter days. Of course, this cake tastes very good on any occasion but the apple-cinnamon combination always tastes best during autumn and winter season for me personally. This vegan apple pie is very delicious because of the crispy pie crust and the unique apple-cinnamon filling. You have to try this apple pie!

Which ingredients are necessary for this vegan Apple Pie recipe?

You need 7 ingredients for this spelt walnut pie crust. Because of the spelt flour, the dough gets a nutty flavor. Adding walnuts it tastes even better. Of course, you can also use another kind of nuts, for example, pecans taste very delicious or you don’t use any nuts at all and use 360 gr flour. By the way, I love to use spelt flour, which I also used in my healthy pumpkin bars with chocolate chips recipe, vegan lemon zucchini lemon muffins recipe or my best eggless banana bread recipe.

I added brown sugar as well. You can also use coconut blossom sugar. Both types of sugar have a slight caramel flavor and therefore go perfectly with this vegan Apple Pie recipe. To make the apple pie a little healthier you should use coconut blossom sugar.

It is also important to add the chilled butter and 2 – 6 tablespoons of ice water or alternatively 80 gr solid coconut oil with 9 tablespoons of ice water. I always use butter for this Apple Pie recipe because butter makes it so tender but it will also work with coconut oil. Then I recommend that you use neutral coconut oil because the coconut flavor doesn’t go so well with apple pie.

Now all that is missing is the addition of some cinnamon and a pinch salt. Why is a pinch of salt often used in desserts? For the simple reason that salt actually makes desserts even sweeter. That was still completely new for me at the beginning. Now I almost always put some salt in my desserts.

You can vary a little with your apple pie filling. Apples are of course essential for this recipe, who would have thought that?! 😀 It is best to choose a slightly sour apple.

As a sweetener, I used brown sugar for my apple filling because I prefer the caramel flavor in my crust and filling. But I’ve added a little less sugar compared to the standard Apple Pie recipes. Normally about 150 – 200 grams are used, but I think a total of 100 grams is enough. I also added date caramel to the filling. So the filling is getting sweeter. By the way, for a vegan date caramel, you only need dates, salt, and water. Dates are also very healthy and I recommend that you try date caramel but you can also skip it.

Additionally you need the following ingredients for the apple pie filling: coconut oil, vanilla extract, cinnamon, pumpkin spice, some lemon zest (OPTIONAL) and juice as well as flour or cornstarch.

How to make this vegan Apple Pie recipe

This Apple Pie is super easy to make but it takes a bit longer to prepare because you should let the dough rest and of course you have to bake the cake. Otherwise, the woven lattice pie crust takes a little longer. You can also make it easy for yourself by first putting the strips that lie lengthwise on top of the apple filling and then putting the strips that lie crosswise on top. Either leave it as it is or you make the woven lattice out of it.

For this apple pie, you also need a mortar, a mixing bowl, a whisk. For the date caramel, you need a blender and for the cake, I used a tart pan. That worked very well! Or maybe you already have a pie pan?! This form is usually used for an Apple Pie.

At first, you make the pie crust. Mix the ground walnuts, spelt flour, sugar, and salt in a bowl. Add the sliced butter and knead everything with your fingers to a crumbly mixture. Then add water to make the dough smooth and easy to shape. Form the dough into a ball. Let the crust rest in the fridge.

If you prefer to use coconut oil instead of butter, add 80 gr of solid coconut oil to the dough. Knead the dough with your hands until the oil is properly processed. Then add the water and knead until the dough is smooth.

Meanwhile, you can prepare your apple filling. For the caramel put dates with water and sea salt in a blender. Then mix your apple slices in a bowl with brown sugar, some date caramel, vanilla extract, lemon zest, lemon juice, cinnamon, Pumpkin Spice and flour.

Cut the dough in half. Roll out one half on a floured surface so large that it covers the pan. Place the dough in the pan and spread the apple filling on the pie crust.

Roll out the second half of the dough on a floured surface and cut the dough into strips. Now decorate your Apple Pie with the strips and use the rest of your dough to add some nice patterns. For example, I just used my heart-shaped cutter.

Serve your Apple Pie warm with the rest of the date caramel, whipped cream or vanilla ice cream. It tastes heavenly together. You can also simply heat the pie in the microwave and enjoy it. Store your remaining apple pie covered for about 2 – 3 days at room temperature. Then store the cake in the fridge covered with foil or use the cover of your cake tin. The Apple Pie will last in the fridge for 2 – 3 more days.

Ingredients

Pie Crust

  • 300 gr Spelt Flour
  • 50 gr Ground Walnuts
  • 200 gr Chilled Butter or 80 gr Coconut Oil with 9 tbsp Ice Water
  • 20 gr Brown Sugar
  • 2 – 6 tbsp Ice Water
  • 1 tbsp Cinnamon
  • 1 pinch of Salt

Apple Filling

  • 4 Apples
  • 60 gr Brown Sugar
  • 3 tbsp Date Caramel
  • 1 tbsp Cinnamon
  • 1 tsp Pumpkin Spice
  • 2 tbsp Flour
  • 1/2 Lemon Some Juice and Zest

Date Caramel

  • 80 gr Dates
  • 50 ml Water
  • 1 pinch of Sea Salt

Instructions

  • Cut chilled butter into pieces and finely grind walnuts in a mortar.
  • Then mix walnuts, spelt flour, sugar, and salt in a bowl. Add the chopped butter and knead everything with your hands to a crumbly mixture. Then add the water to make the dough smooth and easy to shape. *See "How to make Apple Pie" for how to prepare the cake with coconut oil instead of butter.
  • Form the dough into a ball. Wrap the dough in a foil and let it rest in the fridge for about half an hour.

Date Caramel

  • For the caramel, put the dates with water and sea salt in a blender. Mix everything together to a smooth mixture.

Apple Filling

  • Put your apple slices in a mixing bowl and mix them with brown sugar, some date caramel, vanilla extract, lemon zest, lemon juice, cinnamon, Pumpkin Spice and flour.
  • Cut the dough in half. Roll out one half on a floured surface so that it covers the pan. Place the dough in your pie pan and pierce several times with a fork. Then spread your apple filling on the cake base.
  • Roll out the second half of the dough on a floured surface and cut the dough into strips.
  • Now decorate your Apple Pie with the dough strips and use the rest of your dough to add more beautiful shapes. For example, I just used my heart cutter.
  • Spread some milk on the cake and then put the apple pie in the oven for about 45 – 50 minutes.
