Easy vegan Crêpes Recipe
These vegan crêpes are very quick and easy to make with only 4 ingredients. The crêpes are perfect for breakfast or as a snack. You can enjoy the crêpes sweet or savory according to your taste.
When I go for a sweet breakfast, I usually prepare pancakes but recently I was in the mood for a light dough with some filling and then crêpes came to mind. I have always loved to buy crepes at a stand, filled with Nutella and banana. But crêpes are also easy to make at home. You don’t need a crepe maker (although I’m sure it’s quite handy :-D), just a pan. The dough is so easy to make because you only need 4 ingredients. Of course, you can add a few more ingredients. If you prefer the crêpes sweet, you can add some sugar or vanilla sugar.
Basic recipe for vegan Crêpes
For this recipe, you don´t need any eggs at all. This easy recipe mainly consists of
- Flour
- Milk
- Sparkling water
- Oil
I did not use wheat flour but whole-grain spelt flour. I love the slightly nutty taste and the flour goes perfectly with the savory version. In addition, the crêpes taste very delicious with buckwheat flour, so the crêpes are also gluten-free. For the sweet variety, I recommend wheat flour and for a slightly nutty taste spelt or whole-grain flour. These flours are more filling and richer in nutrients.
As a plant-based milk alternative, I prefer to use oat milk but the recipe also works with other types of milk. Important for the recipe is sparkling water which softens the dough. To make the dough even more smooth I have added a bit of oil.
If you only want to make the sweet version, then I recommend adding some vanilla sugar. This makes the dough more flavorful. Add a little bit of salt to make it even sweeter.
Vegan Crêpes – Easy preparation
The crêpes are so easy and quick to make. Moreover, the crêpes are without any additives. First, you mix the dry ingredients together. Then add milk and coconut oil to the mixture and mix to a smooth dough. Finally, add the sparkling water. Stir everything well. Let the dough rest for about 10 – 15 minutes.
Heat the pan to medium heat, add a little bit of coconut oil to the pan and let the dough bake until the edges are easy to remove from the pan. The dough is also no longer liquid. So you can easily turn the crêpe over with a spatula.
Tip: To keep the crêpes warm for a longer time, heat the oven to 100° (or less) and keep your crêpes warm that way.
How to store Crêpes and ideas for serving
Of course, it is best to eat the crêpes fresh but if there are too many crêpes leftover or you want to prepare them in advance stack them on a plate. Cover the plate and you can keep the crêpes in the fridge for 3-4 days. You can heat them up in a pan or microwave.

- Banana with chocolate
- Fruit yogurt
- Fruits
- Cinnamon and sugar
- Applesauce
- Syrup
- Ice
But you can also make savory crêpes, for example with vegetables such as spinach, leek, tomatoes or mushrooms, and grated cheese.

Ingredients
- 200 gr Spelt Flour
- 200 ml Oat Milk
- 150 ml Sparkling Water
- 1 1/2 tbsp Coconut Oil
- 1 pinch of Salt
- 1 tbsp Sugar OPTIONAL
- 1 tsp Vanilla-Extract OPTIONAL
- 3 tbsp Chocolate Powder OPTIONAL (For Chocolate Crepes)
Instructions
- First mix flour, salt, sugar, and vanilla extract together.
- Then add milk and coconut oil. Mix everything to a smooth dough. Finally, add the sparkling water. Stir everything well.
- Let the dough rest for about 10 – 15 minutes.
- Heat the pan to medium heat, add some coconut oil and let the dough fry until the edges can be easily removed from the pan. Then turn the crêpe over with a spatula. Let the crêpe fry for 1-2 minutes until it is lightly brown.
- To keep the crêpes warm, heat the oven to 100° (or less).
