And while I’ve always loved them on their own, one trend I was slow to embrace is the Chocolate Dubai Style – a delicious fusion of pistachio and chocolate.
But as it often happens (I tend to be quite skeptical about new trends), my curiosity got the better of me, and I finally gave the Dubai pistachio chocolate bar a try. What can I say? The combo of chocolate, the unique taste of pistachios, and the crispy dough strands completely won me over!

For the Pistachio Base:
- Pistachio Nuts: Preferably unsalted and unroasted for the best flavor. Roasted pistachios are okay too.
- Dates: For natural sweetness and a nice, soft texture in the bars.
- Pistachio Paste: An extra touch of pistachio flavor that intensifies the taste.
- Date Syrup or Maple Syrup: To sweeten the mixture just a little – depending on your preference (optional).
- Coconut Oil: For a creamy texture and better binding of the ingredients.
- Oat Flour: Just a small amount to give the bars the right sturdiness.
- Vanilla Extract and Salt
For the Dough Strand Layer:
- Kadayif Dough (also known as angel hair dough): These give the necessary crunch and special bite.
- Plant-Based Butter or Coconut Oil: For sautéing the dough strands to make them crispy.
- Date Syrup or Maple Syrup: For sweetness and to help bind the dough together.
For the Chocolate Layer:
- Vegan Dark Chocolate: You can also use another type of chocolate, like milk chocolate, depending on your preference.
- Coconut Oil: To keep the chocolate smooth (and add that shiny look).
- Coarsely chopped pistachios and pistachio paste for topping.

Pistachio Bars (Chocolate Dubai Style) – Preparation in Just 3 Steps
These yummy pistachio bars are super easy to whip up with just a few ingredients and no baking at all. All you need is a food processor or blender and a few basic utensils.
✔ Food processor or blender – to chop the pistachios and dates
✔ Bowl – to mix the ingredients
✔ Pot – to melt the chocolate
✔ Baking dish or square baking pan (around 20 x 20 cm) – for an even shape
✔ Parchment paper – to easily remove the bars later
✔ Spoon & spatula – for evenly spreading out the mixture
Step 1: Prepare the Pistachio Base
Put the pistachios and pitted dates into the food processor and finely chop them. Then, add the pistachio paste, your chosen sweetener, melted coconut oil, vanilla extract, and a pinch of salt. Blend everything until you have a sticky, moldable mixture. If the mixture is too dry, add a little more syrup or a tablespoon of water. Finally, stir in the oat flour to make the base firmer.
Press the pistachio mixture evenly into the lined baking dish.
Step 2: Prepare the Dough Strand Layer
Pull apart the Kadayif dough strands with your fingers and toast them in a pan with a bit of plant-based butter or coconut oil until golden brown. Then mix them with a bit of syrup to lightly caramelize. Spread the toasted dough strands over the pistachio base and gently press them down. Place the dish in the freezer for a few minutes.
Once the mixture has set, cut it into equal pieces.
Step 3: Add the Chocolate Layer
Melt the dark chocolate with coconut oil in a small pot over a water bath or low heat. Pour the melted chocolate evenly over the pistachio and dough strand layer and sprinkle with coarsely chopped pistachios.
Let the bars set in the freezer!

Tips for Perfect Preparation
- Adjust Sweetness: You can easily tweak the sweetness to your liking. If you prefer it less sweet, just reduce the amount of syrup or skip it entirely.
- Oat Flour: Use fine oat flour for a softer texture; this will make the bars less “grainy.”
- Nuts and Seeds: If you want to switch things up, you can add other nuts like almonds or walnuts, as well as seeds like chia or flaxseed.
Storing the Pistachio Bars
These pistachio bars will stay fresh in the refrigerator for about one week. Store them in an airtight container to maintain their consistency and freshness. If you want to make a bigger batch, you can also keep them in a freezer bag or container in the freezer, where they’ll last for up to three months.

- 1/2 tsp Vanilla Extract
- 1 pinch Of Salt
- 2 tbsp Agave Syrup Alternatively, maple syrup (Optional)
- 1-2 tbsp Chia Seeds Alternatively, ground flaxseeds (Optional)
For the Dough Strand Layer:
- 50 g Kadayif Dough
- 1 tsp Plant-Based Butter Alternatively, coconut oil
- 1-2 tsp Agave Syrup Alternatively, maple syrup
For the Chocolate Layer:
- 150 g Dark Chocolate
- 1 tbsp Coconut Oil
- 20-30 g Chopped Pistachios
Instructions
