As you already know I like chocolate snacks very much. But I wanted to try a gluten free snack this time because I often eat gluten containing products. Do you feel the same way? That’s why I’ll introduce you to gluten free snacks more often. There are some people who can’t eat food containing gluten or don’t want to eat too much of it (like me).



What is Gluten? Is it harmful?

Gluten is a protein from grains which in combination with water becomes the so-called gluten protein. Gluten is therefore found in most grain types such as wheat, rye and spelt. According to this almost all dough and baked goods such as pasta, bread, biscuits and cakes contain gluten. However gluten containing binders are also frequently found in convenience foods.

At the moment it has become a trend to eat food without gluten. But with a balanced diet it is definitely not harmful. Only people who suffer from intolerance or coeliac condition have to live without gluten completely.

A snack without eggs and chickpeas

My Cookie Dough Balls don’t need any chickpeas or eggs. I mainly used vegan butter, cashew butter and almond flour. For the reason that the dough is a bit crumbly you should use a little bit more milk. Apart from that this is a no bake variation.

Cookie batter for spooning?

Actually you don’t have to make Cookie Dough Balls out of it, you can eat the dough raw. This cookie dough does not contain, as mentioned, any egg or baking powder. So you can simply spoon it directly. Basically you can try out different types of cookie dough, for example mix it with coloured sprinkles, dried blueberries, caramel, almonds (nuts), cookie crumbs or peanut butter.



The Recipe

This recipe is easy to copy and consists of only eight ingredients. In my opinion it is a great snack to go or just delicious for in between. I also like to put the Cookie Dough Bites in my Porridge or in my Smoothie Bowl. I like to have delicious chocolate dough in my bowls. Something like that makes me happy. It´s like the Ben & Jerry´s ice cream when you find the biscuits or chocolate pieces. Do you know the feeling? 😀


Glutenfree Cookie Dough

Servings: 10 Balls

Ingredients

  • 70 gr vegan butter
  • 30 gr cashew butter
  • 30 gr sugar
  • 2 tbsp vanilla extract
  • 150 gr almond flour
  • 2 tbsp agave syrup
  • 2 – 3 tbsp milk
  • 1 pinch of salt

Instructions

  • Melt the butter and combine it with nut butter, salt, sugar, vanilla in a large bowl and mix until smooth
  • Add almond flour and milk (maybe you need to add more milk to get a smoother consistency)
  • Mix chocolate chips and agave syrup in the dough
  • Roll them into balls and place them on a baking sheet or plate
  • Let it rest in the fridge for 1 hour
  • If you like, you can also cover them with chocolate
