Vegan Crêpes

  • 200 gr Spelt Flour
  • 200 ml Oat Milk
  • 150 ml Sparkling Water
  • 1 1/2 tbsp Coconut Oil
  • 1 pinch of Salt
  • 1 tbsp Sugar OPTIONAL
  • 1 tsp Vanilla-Extract OPTIONAL


  • First mix flour, salt, sugar, and vanilla extract together.
  • Then add milk and coconut oil. Mix everything to a smooth dough. Finally, add the sparkling water. Stir everything well.
  • Let the dough rest for about 10 - 15 minutes.
  • Heat the pan to medium heat, add some coconut oil and let the dough fry until the edges can be easily removed from the pan. Then turn the crêpe over with a spatula. Let the crêpe fry for 1-2 minutes until it is lightly brown.
  • To keep the crêpes warm, heat the oven to 100° (or less).
